Plant Based Vegan Nachos - Taste like the real thing!!
One of the most difficult treats to give up when I finally decided to stop eating dairy, was NACHOS!! Oh my goodness, I love nachos in so many ways... check out this post from the Food Network sharing 50 different nacho recipes... I could absolutely eat all 50!!
My body just couldn't handle the dairy. Full on mucus attack (sorry for the imagery). In the beginning, I struggled with finding clean non-dairy options for my favorite snacks. As time has passed, more and more healthy options became available.
A friend shared this Ahhh-mazing Plant Based Nacho recipe... it even includes a meat substitute which makes it vegan!

A tad Spicy
And I love it because it requires little effort and only a few dishes. Plus, it's great for Large Families like mine.

Plant Based Vegan Nacho Cheese
Plant Based Cheese
2 cup potatoes, cubed (about 1 large potato)
2/3 cup yellow or white onion, chopped
1/2 cup carrot, chopped
1 1/2 - 1 3/4 cup of water, from cooked veggies
1/2 cup canned coconut milk
1/2 cup raw cashews
3 tsp salt
1/2 tsp garlic powder
8 tbsp nutritional yeast
3 tbsp raw apple cider vinegar
1 tbsp chili powder
Pinch of paprika
Pinch of cayenne
For the cheese, in a saucepan, on medium to high heat, boil the potatoes, onions and carrots. When tender, remove from heat. (Do not discard the water.) in a high speed blender, add remaining cheese ingredients including 1 1/2 cup of the water from the veggies. Depending on desired thickness, retain the remaining water for later to add to the cheese mixture when combining with the meat. Set aside.
Plant Based Meat
1-2 tbsp cold pressed olive oil
1/2 yellow or white onion, chopped
3-4 garlic cloves, minced
1 pkg vegan ground beef (we use Beyond Meat ground beef from Whole Foods)
1-2 tsp onion powder
1-2 tsp garlic powder
1/2 - 1 tsp cumin
1 tbsp chili powder
1 tbsp liquid smoke
1 tbsp vegan Worcestershire sauce
Salt and pepper to taste
1 jalapeño, finely chopped
1 tomato, chopped
For the meat, add oil to a deep frying pan on medium heat. Add chopped onion and minced garlic. Add vegan ground beef and cook until slightly done. Add next 8 ingredients. Once the meat is cooked, add jalapeños and tomatoes and cook until tender.
Add cheese mixture to meat mixture. Stir until fully incorporated over medium heat.
If you still need a little more Nacho flavor, add it a little more of either one of these: Chili powder, Paprika or Nutritional Yeast. Add additional water from veggies, for desired thickness.
